Baked Salmon

Ingredients for 6 people

  • 1 kilo of uncooked large South Australian King Prawns
  • 2 cups of fresh tomatoes cut very fine
  • 1 medium size onion cut finely
  • 1 hot chilli cut in rings
  • ½ olive oil
  • 200 grams of good Greek feta crumbled
  • Black pepper ground
  • ½ teaspoon sugar

This recipe originally had salt as well but I find that adding salt to a dish that has feta can be disastrous and I always choose to leave salt out from anything that has feta.



  1. Rinse prawns and cook in boiling water for 10 minutes, keep the stock and allow to cool till you can handle them and set aside
  2. Peel the body and remove intestine leaving tail on as well as the head.
  3. In a deep frypan heat the oil and sauté the onion
  4. Add the tomatoes, pepper, parsley and sugar
  5. Cook for 5 minutes and add 1 cup of stock
  6. Cook till liquid becomes a sauce
  7. Add prawn and cheese
  8. Cook for 2 minutes
